Celebrity Chef: Blissful Bread Pudding

Bread mixture:

  • 3 quarts milk
  • 10 eggs
  • 1/2 cup of vanilla
  • 1 1/4 cups of flour
  • 2 1/2 cups of sugar
  • 46 oz biscuits
  • 2 cups of coconut
  • 2 cups of raisins (optional)

    Icing:

  • 1 1/2 cups of milk
  • 1 1/2 cups of sugar
  • 1 1/2 cups of coconut

    Into stock pot pour 3 qts. of milk. Be sure to spray the bottom of the pot. Bring the milk to 170 degrees.

    In another bowl combine 10 eggs, 1/2 cup vanilla, 1 1/4 cup of flour, 2 1/2 cups of sugar. Mix thoroughly and add to 170 degree milk. Cook until it is a custard-like consistency. Stir with a wire whip constantly.

    Have 46 oz of biscuits a day or two old and grind them into bread crumbs. Pour the crumbs into cobbler pan half full.

    Add 2 cups of coconut and 2 cups of raisins (if you want raisins) and mix thoroughly into bread mixture.

    Pour pudding mixture into bread mixture and stir thoroughly.

    Bake 5 minutes at 375.

    Icing:

    Into pot mix 1 1/2cups milk, 1 1/2 cups sugar, 1 1/2 cups coconut. Bring mixture to boil.

    Cook, stirring constantly until mixture thickens.

    Pour mixture over already baked pudding.
