Celebrity Chef: Corn & Bean Dip

  • 4 cans shoe peg (white) corn
  • 4 cans black beans
  • ¾ cup salad oil
  • ¼ cup sugar
  • ¾ cup apple cider vinegar
  • 8 ounces feta cheese, crumbled
  • 2 bunches scallions, chopped small
  • ¼ cup cilantro, torn or chopped

    Serve with healthy chips. May be made in advance and used as a dip, condiment or vegetable salad.

    Mix all ingredients except cilantro. Chop and add cilantro just before serving.

    This recipe may be served at room temperature. It keeps several weeks in refrigerator and can also be frozen.
