Celebrity Chef: Andrew’s Mini Pizza Snacks

These snacks can go right from the freezer to the oven with little time and effort. They’re perfect for moms who are pressed for time, active college students, or a busy bachelor who’s always on the go.

Ingredients:

  • 1 cup shredded mozzarella cheese
  • 1 cup tomato sauce
  • 1 tsp Italian seasoning
  • 5 100-Calorie English muffins, split

    Toppings of choice (examples):

  • Sliced pepperoni
  • Sliced mushrooms
  • Chopped red bell pepper
  • Chopped green bell pepper
  • Sliced olives
  • Chopped onions

    DIRECTIONS:

    Season tomato sauce with Italian seasoning; mix well. Spread sauce on English muffins, and add desired toppings. Place muffins on an ungreased baking sheet and bake at 400˚ F for 12-14 minutes or until cheese is melted.

    Keep these great snacks on hand in your freezer: Prepare English muffins with sauce and toppings; cover and freeze for up to 2 months. To use frozen snacks, place on an ungreased baking sheet, and bake at 350˚ F for 20 minutes or until cheese is melted.
