Celebrity Chef: 3 Bean Salad

  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 c. green onion, diced
  • 1 clove garlic, minced
  • 1 tsp dried cilantro or if fresh, add to taste
  • 1 cup olive oil
  • 1/2 cup red wine vinegar
  • 4 tsp lime juice
  • 1 can black beans
  • 1 can red beans
  • 1 can garbanzo beans

    Drain and rinse beans.

    Combine with chopped vegetables.

    Add oil, vinegar, and lime juice.

    Toss all together.

    Chill for 8 hours.
