Celebrity Chef: Curry Ripe Olive Spread

  • 1 can chopped ripe olives (approximately 7 oz.)
  • 1 cup chopped green onions (about 4 stalks)
  • 3 cups grated American cheese (around 1lb)
  • 1 slight cup mayo
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 6 English muffins (or crostini, melba rounds, other crackers)

    Mix all ingredients (except muffins/crackers) in a bowl. Toast backs of muffins, split in half lengthwise. Pile mixture high on one side because it flattens as cheese melts. Place under broiler until puffy and brown, or serve cold. Serves 6 as sandwiches or makes several dozen appetizers.
