Celebrity Chef: Sprouted Lentil Salad

  • 2 cups lentil sprouts
  • 1/2 cup seeded, diced tomato
  • 1/3 cup sliced scallions
  • 1/2 bunch chopped fresh cilantro
  • 1/2 cup thinly sliced radished
  • 2 T. olive oil
  • 4 T. fresh lemon juice
  • 2 T. white wine vinegar
  • 2 cloves garlic, minced
  • 2 t. dried oregano
  • salt and pepper to taste

    In a medium bowl, combine the lentil sprouts, tomato, scallions, cilantro, and radishes.

    In a small bowl, whisk together the olive oil, lemon juice, white wine vinegar, garlic, oregano, salt, and pepper. Drizzle the dressing over the salad and toss lightly to coat. Chill for 20-30 minutes before serving.
