In large bowl beat eggs and milk until fully blended.
Open the box of Streit’s Matzohs and break 6 matzos into thirds (long way).
Hold 3 matzos at a time under running warm water for about 4 seconds or until very moist but not soggy.
Place moist Matzoh into bowl with eggs and milk and toss until fully soaked.
Warm large frying pan on stovetop with one tablespoon Smart Balance.
Pour Matzoh and Egg/Milk/Seltzer mixture into pan and heat slowly over medium heat.
Turn large pieces once Matzoh begins cooking. Mix 2 tablespoons of Smart Balance. throughout. Keep mixing until fully cooked so you don’t have one big pancake.
When fully cooked, serve with salt and pepper to taste. May be served with melted sprinkled cheese, or sugar and cinnamon or honey or syrup.
Note: This recipe can be cooked in a microwave, but stirring throughout is essential.
