Celebrity Chef: Fiesta Bean Soup

This recipe is quick, easy and pretty healthy!

  • 1 container of chunky salsa (La Mexicana from Publix works great)
  • Garlic Powder
  • Cilantro
  • 8 oz Cheddar Cheese (Low Fat can be substituted)
  • 2 Cans Pinto Beans
  • 1 Cup Low Sodium Chicken Broth

    On medium heat, combine salsa with garlic and chicken broth, heat for 2-3 minutes
    Add in the cans of Pinto Beans.

    Increase heat to high power and bring mixture to a boil.

    Add cheese (you may use as little as 2 oz, or the entire 8oz for a more decadent taste.)

    Stir while on a continuous boil for 5-7 minutes, or until the soup reaches a thick consistency.

    Sprinkle with fresh chopped cilantro and a little more cheese.

    This soup can be jazzed up by adding sausage, smoked bacon or even chicken.
