Ingredients:
6 eggs, slightly beaten
½ cup green scallions
½ cup tomatoes
½ cup ham and bacon (cut into bite-sized pieces)
1 cup cheese, cut into cubes (Mayor Marks recommends a mixture of soft- such as Laughing Cow; medium – such as Edam; and hard – such as cheddar.)
Non-stick cooking spray
This recipe yields three omelets. When preparing, divide all ingredients into three parts and cook one omelet at a time.
Preparation:
Coat skillet with non-stick cooking spray. Add scallions, ham/bacon and tomatoes to pan and heat on medium.
Add eggs and cook (moving eggs with spatula to avoid burning) until the bottom is cooked.
Flip the omelet and cook other side. Flip again.
Add cheese and allow to melt slightly before folding omelet. Serve immediately and enjoy!
