Anna Johnson’s Chicken Parmesan

Serves 4 - 6

  • 4 to 6 large boneless skinless chicken breasts (about 1 - 1 1/2 pounds total)
  • 1/2 pound fresh mozzarella cheese, thinly sliced or grated
  • 2 cups Italian tomato sauce
  • Garlic salt and pepper
  • Fresh parsley

PREHEAT oven to 350 degrees.

PLACE 1/2 cup of the tomato sauce in the bottom of a baking dish large enough to hold the chicken breasts in one layer. Add the chicken breasts to the baking dish; cover with the rest of the tomato sauce and season with garlic salt and pepper and top with the mozzarella.

COOK the chicken parmesan in the oven for 45 minutes. Garnish with fresh parsley.

SERVE with grated Parmesan cheese. Goes great with a side of pasta and a green salad and or French/Italian bread, or garlic bread.
