Chateaubriand

Cooking together is one of our favorite things. I do the shopping and the meal planning; Johnny seasons the meat and cooks on the grill. I set the table and prepare the vegetables. In a short while a perfect meal is prepared with ease. Advance shopping and planning makes any meal easy. Presentation makes a meal special. This is an easy, elegant dinner perfect for any special night.

Ingredients:

  • 3LB filet of beef tenderloin (whole)
  • 1 pkg sliced portabella mushrooms
  • 1 ½ cup small baby carrots
  • 6 or 7 small red new potatoes
  • 1 large crown of broccoli
  • 1 or 2 crowns of cauliflower
  • 1 package of Béarnaise sauce (dry mix)
  • Olive oil, real butter, salt, fresh cracked pepper, milk, Brandy (ingredients needed for preparation)

    Preparations:

    Let meat set out to get to room temperature approximately 30 minutes.

    Season meat well with salt and fresh cracked pepper .Be sure to salt meat all over .Pepper according to taste.

    Set aside. Preheat grill; prefer gas grill. Grill meat to your taste. Best if served med rare. To cook on our grill to med rare it takes about 15 minutes.

    It is important to sear the meat .this assures juicy meat and nice presentation. Do not pierce meat with fork use tongs to keep juices in. When done

    Bring meat in for final preparations.

    Prepare vegetables each separately and put on nice platter or glass dish that may be microwaveable.

    Prepare mushrooms in skillet with 2 tablespoons of olive oil and 1 tablespoon of garlic salt. Sauté and add 3 to 4 tablespoons of water to cook down.

    Mushrooms take approx 20 minutes. Set aside.

    Prepare carrots, boil with 2 cups of water until slightly tender but still crunchy.

    Prepare potatoes, boil with 3 cups of water until tender but do not overcook.

    Prepare broccoli and cauliflower. I steam until slightly tender...very important…. do not overcook as it will continue to cook when you drain.

    Prepare Béarnaise sauce as pkg. says. This takes only 5 minutes.

    Table should be set and ready. Nice bottle of wine (Cabernet or Merlot would be a great choice). Warm rolls at this time. Add real butter and salt and fresh cracked pepper to vegetables .Microwave to warm.

    Warm skillet until very warm. When you put your hand over you can feel heat. Place prepared meat in pan and you will hear a sear noise…immediately pour

    About ¼ cup or so of Brandy (may be purchased at liquor store any brand) immediately ignite with lighter and turn meat over and over to get delicious brandy flavor

    And to make an impressive show: take meat out after flames die down and slice at angle in ½ inch slices.

    Ready to serve: Serve sauce over meat if desired. This looks like a lot but you can prepare vegetables ahead of time and warm in microwave. This meal can be served with about 40 minute’s time.
