Celebrity Chef: Spanakopeta (Spinach Pie)

2 packages of frozen chopped spinach or 2 lbs fresh spinach
1 tablespoon salt
1 lb. Feta cheese, crumbled
1 small onion, chopped fine
4 eggs, slightly beaten
2 tablespoons olive oil
Dash of salt & pepper
1 box of fila dough
½ lb. butter, melted

Take thawed spinach and squeeze out excess water, this is a very important step in making a good filing. In a bowl combine the spinach, feta cheese, onion, eggs, olive oil and salt and pepper to taste. Mix by hand until all ingredients are thoroughly blended together.

Lay fila dough out on waxed paper and cut vertically into strips, usually 6x12 strips depending on how large you want the pie. Take a piece of saran wrap and cover fila and then place a cool damp towel on top. Fila dries out very quickly, so it should be kept covered while working. On a clean surface or waxed paper take one strip and brush half with butter; fold over other half to make a strip about 3 inches in width. Brush with butter.

Place 1 teaspoon of spinach mixture at one end of each strip, folding strip diagonally until triangles are formed. Similar to how you would fold a flag. Brush tops with melted butter, and place on ungreased baking sheet.. Bake in oven at 375 degrees for 20 minutes, or until golden brown. Serve warm. Makes about 20-25 triangles.
