Celebrity Chef: Fresh Cranberry Salad

Ingredients:

2 cups Fresh whole cranberries - washed
The "meat" of one whole orange
1 cup sugar
1 large (or 2 small) cherry or strawberry jello
2 cups boiling water
1 cup cold water
1 cup nuts (walnuts or pecans)

Day 1 - chop cranberries and orange. Mix the cup of sugar. Let stand in refrigerator overnight.

Day 2 - Dissolve jello in boiling water. Add cold water and cranberry mixture. Stir until blended. Place in refrigerator to begin to gel. After it has had time to gel slightly, stir in nuts.

Place in a 9 x 13 dish and return to refrigerator to complete the gel process. (I usually leave this overnight again).

Cut into serving size squares and serve on a lettuce leaf.
