* onion (chopped)
* green pepper (chopped)
* red pepper (chopped)
* ham (diced)
* bacon (crumbled)
* mushrooms (sliced)
Melt butter in a non-stick omelet pan over medium - medium high heat. Mix eggs with milk, set aside. Add onion, red pepper, green pepper, and mushrooms to pan. Saute until lightly browned. Add bacon, ham, spinach, and stir briefly.
Pour egg mixture into pan and cook. Use spatula to pull edges of omelet to center, allowing remaining egg mixture to flow to outer edges. Let omelet cook until its mostly firm throughout. Flip omelet and let cook on the other side for a few minutes. Add shredded cheese to 1/2 of the omelet, allowing it to melt briefly.
Slowly transfer omelet to plate, using the pan to fold the omelet over the cheese. Add shredded cheese to top of omelet and serve warm.
