Celebrity Chef: Shrimp and Crab Queso Dip

1 can Rotel tomatoes and chile pepper
1 16 oz box of Velveeta, cubed
½ small jar of minced garlic
½ small jar of roasted minced garlic
1 bunch of scallions (chopped)
¼ lb of rock shrimp or small shrimp (cooked)
¼ lb of crab meat
Cilantro for garnish

Mix Rotel, cubed Velveeta, and minced garlic (roasted and plain) in a casserole dish in the Microwave on medium heat until cheese has completely melted. Add scallions, shrimp and crab and mix thoroughly. Heat in microwave on high heat for approximately 1 minute or until shrimp and crab are heated. Garnish dip with Cilantro and serve with tortilla chips.
