Celebrity Chef: WOW Nuts

Preheat oven to 375 degrees.

In small bowl, combine and set aside:

1 tsp. cinnamon

1 tsp. salt

¾ tsp. chipotle chile powder

½ tsp. ground cumin

¼ tsp. ground nutmeg

¼ tsp. ground cloves

¼ tsp. black pepper

In large mixing bowl, place 6-8 cups nuts of choice (walnuts, pecans, almonds, etc.) Set aside.

**Suggestion: sift nuts in colander first to remove tiny crumbs.

In small sauce pan, blend:

1 cup sugar

1/3 cup real maple syrup

¼ cup water

1 tsp. Worcestershire sauce

Bring the heat up slowly, stirring to dissolve the sugar completely. Then, bring to a boil, stirring constantly.

Reduce heat and simmer over low-medium heat approximately 3-5 minutes.

Stir in spice mixture and simmer another minute. Mixture will thicken slightly.

Remove pan from heat. Pour hot syrup over nuts and toss well to coat.

Arrange in single layer on large jelly roll pan (lined with parchment paper).

Bake at 375 degrees for 10 minutes. Remove from oven, stir well, arrange in single layer and return to oven.

Bake another 5 minutes. Remove and repeat process 1-2 more times as needed.

Remove and spread on large trays lined with parchment paper to cool completely. Coating will crisp up as nuts cool.

Store in airtight containers or zip-top bags. Enjoy as a snack, use instead of plain nuts in recipes or as a salad topper.
