Celebrity Chef: Steamed Fish

2 lbs fish (sliced or whole)
2 limes
2 oz. butter or cooking oil
3 medium onions, chopped
2 tomatoes
2 stalks scallion (green onion)
8 oz okra
1 sprig thyme
1 whole green scotch bonnet pepper with stem
1 medium carrot, chopped
2 cups fish stock or water

Juice limes in some cold water and use to rinse the fish. Sauté onions in butter in butter or oil in a saucepan. Remove and set aside. Place scallion, thyme, carrot and all other vegetables in oil and stir fry. Add stock or water and allow vegetables to cool. When mixture is ready, add fish and onions. Take out whole green pepper and set aside. Simmer mixture of vegetables, fish and onions, with lid, for 15 minutes or until cooked.

Serves 6
