Celebrity Chef: Stuffed French Toast

1 loaf day old Italian Bread - slice diagonally into one inch slices (available in your grocer bakery section)

3 eggs

2 cups milk - whole, 2% or skim

1 1/2 tsps vanilla or Kahlua or Grand Marnier

1 tablespoons sugar

1/8 teaspoon salt

5 tablespoons strawberry or raspberry preserves
1/4 stick of butter

Beat eggs with wire wisk, then add milk, vanilla or other flavoring, sugar and salt. Mix well. Make a deep slit in bottom of each slice of bread. Insert a couple of spoonfuls of preserves and press closed. Melt butter until slightly brown in skillet. Dip the bread in mixture and turn until absorbed into bread. Do not make bread soggy. Fry until golden brown on each side. Turning only once. Remove and place on dish lightly sprinkling with powdered sugar. Serve with warm maple syrup.

I also serve with home baked ham and yard eggs with a fruit salad.
