Capt. Jim's Cabos Crab Cakes

1/4 cup Mayonnaise
2 tsp. Worcestershire
1 Tablespoon Gulden's Mustard
2 tsp. Old Bay Seasoning
Dash of Nutmeg
Dash of Tabasco Brand Hot Sauce
3 Large Eggs
3 pieces of Texas Toast Bread (edges cut off)

1 lb. claw Crab meat
1 lb. lump Crab meat


Combine first six ingredients, mix well, add eggs, beat for 1 minute, add bread cut into 1/2 in. pieces,, allow to sit and soak for 5 minutes, fold freshly picked crab meat into mixture, do not over mix! Set in refrigerator for at least 2 hours to tighten and blend flavors. Cook in skillet or griddle on meduim heat for 3-5 minutes per side (depending on the thickness of the crab cake). Serve with fresh tartar sauce and Worcestershire sauce.
