3 Tbsp. cornstarch
3 Tbsp. sugar
2 Tbsp. unsweetened cocoa powder
2 cups skim milk
1 tsp. vanilla extract
Combine dry ingredients in a saucepan. Slowly add and thoroughly stir in the milk.
Cook on medium heat, stirring constantly, until mixture comes to a boil. Lower heat and gently simmer for 3-4 minutes.
Stir in vanilla. Put pudding in individual cups or a decorative serving bowl. Serve warm or chill for 2 or more hours until cold and set.
Very rich, satisfying low-fat dessert; simple, quick, and unprocessed.
