6 cups kumquats (sliced and de-seeded)
2 ½ cups water (or 1 cup lemon juice and 1 ½ cup water)
4 cups sugar
1 package low sugar Sure-Jell
2 Tbsp bourbon or brandy (optional)
1. Bring kumquats, water and lemon juice (if using) to a boil. Reduce heat, cover and simmer for 20 minutes. Stir occasionally.
2. Add the sugar and Sure-Jell to the Kumquat mixture and return to a boil on high heat stirring constantly. Once the mixture reaches a full rolling boil, continue to boil for exactly one minute stirring constantly.
3. Remove from heat and add bourbon or brandy (if using).
4. Ladle into prepared jars.
