It is low fat and can be paired with either grits (my personal fav) or rice:
Shrimp Veracruz
1 tbsp olive oil
1 small onion, chopped
1 jalapeno (seeded and minced)
1 medium garlic clove - minced (or teaspoon of minced garlic)
1 and ¼ pound of shrimp (peeled, deveined and tails removed)
3 medium tomatoes (cored and diced)
½ sp salt
¼ tsp black pepper
1 tbsp fresh lime juice
¼ cup fresh cilantro – chopped
Heat oil in skillet.
Add onion, jalapeno and garlic.
Sauté over medium-high heat for 2 minutes.
Add shrimp and sauté 1 minute, stirring frequently.
Add tomatoes, salt and pepper.
Reduce heat to low and simmer 5 minutes.
Stir in lime juice and cilantro.
Simmer 1 to 2 more minutes so flavors blend.
