3 medium cucumbers, peeled and cut in chunks (I use those big wrapped ones from Sam’s)
3 cups, chicken broth, cooled
3 cups sour cream, can use light (would low fat yogurt be better?)
3 T. white vinegar
2 t. Kosha salt
1 clove garlic, crushed
Whirl cucumbers in blender (this is an old recipe, use food processor) for a very short time with a little of the chicken broth. I do two batches, then add remaining chicken broth, sour cream, vinegar, salt and garlic in a bowl. Stir just enough to mix. Chill.
2 small tomatoes, chopped
¾ c. toasted almonds
½ c. sliced green onions
½ chopped parsley
Sprinkle all this on top. 6-8 servings, big ones, probably 8 women.
