Sweet Potato Crunch

6 -8 sweet potatoes peeled and quartered
2 eggs
1/2 cup sugar
1 stick butter
1 teaspoon vanilla

Topping - mix following together and set aside
1 cup chopped pecans
1 cup brown sugar
1/4 cup flour
1/3 cup melted butter

1. Boil potatoes for about a 1/2 hour until soft.
2. Beat potatoes well - adding sugar, butter, vanilla and eggs
3. Put into casserole dish, sprinkle with topping
4. Bake at 350 for 30-40 minutes.
