Shrimp Fra Diavolo (“Shrimp of the Devil”)


Shrimp Fra Diavolo ("Shrimp of the Devil")

Ingredients
-one pound peeled and deveined medium or large shrimp
-four to five tablespoons of extra virgin olive oil
-four to five minced garlic cloves (more if you like; you can never have too much garlic!!)
-three to four teaspoons of crushed red pepper (if you want it really hot add a half teaspoon of cayenne pepper too)
-about four to five cups of marinara sauce (you can used the Barilla jarred sauce or make a quick marinara - see below)
-salt and pepper to taste
-dried oregano or basil to taste

In a frying pan heat up the olive oil and add the garlic. Sauté for about a minute or two. Add the shrimp and sauté about two minutes, adding some salt and pepper to taste. When the shrimp turn pink add the crushed red pepper and sauté about a minute. Add the marinara sauce and some basil or oregano and let simmer for about three to four minutes. Serve over the pasta of your choice (typically spaghetti or linguine), rice, polenta or couscous.

Feeds two Italians and four to five non-Italians! Buon Appetito!!

Easy Marinara Sauce

Ingredients
-three 28 ounce cans of crushed tomatoes
-three to four cloves of minced garlic (again, more if you like; you can never have too much garlic!!)
-three to four tablespoons of extra virgin olive oil
-salt and pepper to taste
-dried oregano or basil to taste

In a frying pan sauté the minced garlic in the olive oil. After about a minute add the crushed tomatoes. Add salt, pepper and oregano/basil to taste. Let simmer for about five to ten minutes, stirring occasionally.
