Gazpacho Soup with Focaccia Crackers



Ingredients

• 2lbs Tomatoes peeled and diced
• 8oz Onions, medium dice
• 1 Green bell pepper
• 1 Red bell pepper
• 1Yellow bell pepper
• 1lb cucumbers, peeled, seeded, medium dice
• 1oz Garlic minced
• 2fl oz Red wine vinegar
• 2fl oz Lemon juice
• 4oz Olive oil
• Salt and pepper to taste
• 1 Jalapeno
• 3qt Tomato juice
• 8fl oz Carrot juice
• 16fl oz White Stock
• Fresh basil as Garnish

Directions

• Combine all ingredients in a stainless steel mixing bowl.
• Chill for 2 hours
• Serve with focaccia crackers
