Gluten Free Breakfast Casserole



Ingredients

2 pounds ground sausage
1 tablespoon butter, melted
1 cup gluten free Bisquick
3 tablespoons shortening
8 eggs, beaten and divided
1 1/3 cup milk, divided
2 cups cheddar cheese, shredded and divided

Directions

Brown sausage, drain, and set aside. Preheat oven to 375°. Put melted butter in 9 x 12 baking dish. In a mixing bowl combine Bisquick and shortening until fine crumbles form. Add 2 beaten eggs, 1/3 cup milk, and mix thoroughly. Press mixture into baking dish. Layer 1/2 cup cheese then sausage on top of dough. Whisk together remaining 6 eggs and 1 cup milk. Pour over sausage.
Bake 30 minutes, remove from oven, top with remaining cheese, and bake an additional 5-10 minutes. Remove from oven. Let rest 10-15 minutes before serving. This will help the center to set.
