Loaded Smashed Potatoes


8-10 Small potatoes
1/2 c plus 2T Frying oil
Salt and Pepper- to taste
1/4 c Bacon Crumbles
1/4 c Chopped Scallions
1/2 c Sour Cream
1/4 c Shredded Cheddar Cheese


1. Preheat oven to 350.
2. Wash potatoes, drain and coat with 2T oil,
Place on sheet pan and bake for 20 min. or until a fork goes in easily
2. Gently press potatoes to about 3/4 inch thick with a potato masher or by hand, keeping potatoes intact as much as possible.
3. Heat oil in a skillet. Place potatoes in the pan with a spatula. turn once, until golden brown, about 5-7 minutes. Season with Salt and Pepper
4. Serve topped with Sour cream, Bacon, Cheese, and Scallions
