Peach Cobbler


(Serves 6)

1 stick unsalted butter (4 oz), melted
1 cup all-purpose flour
2 cups sugar, divided
1 tablespoon baking powder
Pinch of salt
1 cup milk
4 cups fresh peach slices
1 tablespoon lemon juice
½ teaspoon ground cinnamon


Preheat oven to 375°F. Melt butter in a 9x9-inch baking dish.

Combine flour, 1 cup sugar, baking powder, and salt in a large bowl. Add the milk and stir until the dry ingredients are moistened. Pour the batter over the melted butter.

Bring remaining 1 cup sugar and peach slices to a simmer on medium heat in a medium sauce pan, be sure to stir constantly. Add lemon juice once peach mix has slightly softened and sugar is melted. Pour this mix over the batter making sure not to mix into the batter. Sprinkle with cinnamon.

Bake 40–45 minutes or until golden brown. Serve cobbler warm or cool with ice cream.
