Twice Baked Potatoes



Ingredients

3 potatoes
1 chopped cooked chicken breast
2oz chopped bacon
¼ red pepper
¼ yellow pepper
¼ orange pepper
½ jalapeno pepper
1oz chopped broccoli
2oz sharp cheese
1fl.oz heavy cream
1oz sour cream
3Tbsp butter
1oz cream cheese (room temp)
½oz Chives
1 garlic clove, minced
Tt salt and pepper
3tbs chopped parsley

Directions

Preheat the oven to 400 degrees F.

Wash the potatoes and pierce them with a fork. Rub the potatoes with the olive oil and place them on a pan. Bake the potatoes for 45 minutes to an hour, or until done. Remove the potatoes from the oven and cut them in half lengthwise. Set aside. Reduce the temperature of the oven to 350 degrees F.

Simmer peppers in a buttered pan on med for 2 mins then add broccoli and garlic for an additional 2 mins. Set aside. When the potatoes are cool enough to handle, scoop out the middle into a large mixing bowl. Add the pepper mixture, chopped chicken, ½ of the chopped bacon heavy cream, butter, sour cream, ½ of the sharp cheese, cream cheese, ½ of the chopped chives, and salt and pepper to taste. Mix until creamy. Divide the mixture evenly and spoon it back into the potato shells. Return the potatoes to the oven for 15 minutes. Top with the remaining green onions, bacon, and sharp cheese and cook for another 15mins. Remove from the oven and garnish with the parsley.
