Mr. Food: Irish Cream Cake

Mr. Food is indulging the sweet tooth with yet another St. Patrick's Day dish. This time, the gourmet guru is bringing in a special guest to help him make a dessert fit for a leprechaun.

I asked our chef friend and restaurateur to share his famous St. Patrick's Day cake with us 'cause it's a leprechaun favorite.

St. Patrick’s Day is time for parties, and either you have guests coming over, or you're going to a party and need to bring something, so how about a great cake?

To make this at home, we start with some yellow cake mix, some vanilla pudding, some eggs, water, vegetable oil, and some Irish liqueur, and we get it nice and smooth. Then we have a bundt pan that we’ve sprayed; we cover the bottom with some chopped pecans and then we just pour this right in.

Now we bake this off in the oven, and when we’re done what we need to do is just finish it off. We’re going to take a little bit of glaze that we’re going to make with some water, some sugar, some melted butter and more of that Irish liqueur.

We melt that all together and then we kind of prick the top right around the cake and pour our glaze right over the top. We let that soak in and then when we’re done we invert this onto a pan, and we’re all set.

The leprechauns are going to have more than a wee bit of fun with this! And it looks as holiday festive as it tastes!

Would you like the recipe? You just send a self-addressed, stamped envelope, marked “Irish Cream Cake,” to me, Mr. Food, right here at the station. May the luck of the Irish be with you and everyone, along with many, many years of "ooh it's so good!"®"
