Mr. Food is turning his kitchen into a island retreat with one of his tasty, tropical desserts. Gather around chocolate lovers!
This time of year we can treat ourselves to a tropical vacation without having to leave home, easily, by giving one of our favorite desserts a little tropical twist!
In a large bowl we combine 1/2 cup orange juice and 1/4 teaspoon coconut extract (it's in the baking aisle at the market.) To that we add a hulled pint of strawberries, a cut-up pineapple and 2 cut-up bananas.
Toss it a bit, and let it sit in the fridge for about 1/2 hour to let the sweet and tangy flavors seep in. When they're ready, in a saucepan over low heat we melt 2 squares of unsweetened chocolate with 1 can of sweetened condensed milk (not evaporated milk) and 1/3 cup mini marshmallows.
When it's smooth, we add in a mixture of 1 teaspoon instant coffee that we dissolved in 1 teaspoon hot water. We pour that rich, tangy-sweet chocolate sauce into a fondue pot, serve with the marinated fruit, and let 'em dip and dunk to their hearts' content! You want to make it more tropical? How about wedges of mango? Look at those gold kiwis and green kiwis! That's sunshine!
