Mr. Food: Easter Leftovers

Mr. Food is joining us with a couple of tasty ideas to spice up those Easter leftovers, so let's see what he's cookin' up.

Easter dinner is behind us, but if some leftovers have been left behind too, how can we get the most out of them?

In a bowl, we combine 1 drained and chopped 14-ounce can of artichoke hearts, 1 minced garlic clove, and 1/4 teaspoon each of salt and pepper.

We add 1 cup each of chopped fresh spinach and shredded Swiss cheese and 1/2 cup chopped leftover ham. Now we unroll the dough from a container of refrigerated pizza crust dough, cut it into 6 equal squares, spreading each into a 5-inch square.

On a rimmed baking sheet, spoon equal amounts of the spinach mixture into the center of each square. Fold 'em over to form triangles, press the edges together with your fingers to seal them, and after just 12 to 15 minutes in a 425 degree oven, you've got dinner on the table!

And sure, no matter what your holiday dinner leftovers were, any type leftover ham, or maybe you've got turkey or roast pork or roast beef, any of them will work the same way this week! Serve 'em with a simple salad and you’re ready to go!
