Mr. Food is servin' up one cartoon character's favorite food. The gourmet guru has a tasty idea to keep you "strong to the finish, ‘cuz you eat all your spinach."
Getting the gang to eat their spinach with as much gusto as Popeye can be quite a struggle, but here's a fresh idea that just might do the trick, and talk about quick cooking!
Ever hear of wilted spinach salad? Well, it's not really wilted!
In a large skillet, in 2 tablespoons of olive oil over a medium-high heat, we sauté 2 minced cloves of garlic, 1/4 teaspoon pepper and 1/8 teaspoon salt maybe 1 minute. Now add 1 package fresh spinach, stir it around about 30 to 45 seconds, and remove it from the heat. Yes, 30 to 45 seconds, that's all it needs.
Toss it with 1/4 cup chopped sun-dried tomatoes in oil and 1 tablespoon toasted pine nuts, and that's it! We're done! Told you we could cook this up in the blink of an eye!
And with fresh spinach coming into its peak season, and especially being available already pre-washed in bags, it's even easier to get our gang to eat their spinach, and if we top it off with some grilled chicken or fish, talk about full-flavored! Bet you they're going to clean their plates, and mission accomplished!
If you’d like the recipe, just send a self-addressed, stamped envelope, marked “Wilted Spinach Salad,” to me, Mr. Food, right here at the station, or look for it online for even getting Popeye's seal of approval!
And with sales on fresh spinach in the coming months, we save money with no struggling to get 'em to eat something good for them. Why, they'll be asking us to make it, 'cause "OOH IT'S SO GOOD!!®"
