Mr. Food: Pesto Pasta

Take your taste buds on a tasty trip to Italy with another one of Mr. Food's delicious dishes. Let’s head to the kitchen with the gourmet guru.

One of the real joys of cooking is making a dish from scratch so we can get the raves of our very own homemade, but doesn't that mean a lot of work? Not today! You know the very popular basil-based pesto sauce that's in so many Italian dishes? Here's an easy version that'll make us look like kitchen heroes!

Using our blender or food processor, we combine 2 cups lightly packed fresh basil leaves, 1 cup olive oil, 1 cup grated Parmesan cheese, 2 garlic cloves, 1/2 cup pine nuts or walnuts, 1/2 teaspoon salt, and 1 tablespoon fresh lemon juice (that helps the basil keep its bright green color).

We blend the mixture until nice and smooth, and we've made what everybody thinks is so difficult! Ha! What to serve it over? How about cooking up a pound of linguine? Just toss it with the pesto mixture and voila! Homemade as homemade can be pesto pasta! Want to make it even more special? Pick up a wedge of Parmesan cheese and grate some over each plate.

Maybe sprinkle on some chopped roasted peppers for garnish, and wow!

If you’d like the recipe, just send a self-addressed, stamped envelope marked "Pesto Linguine," to me, Mr. Food, right here at the station, or it's online for discovering the joy and raves of cooking from scratch. There's nothing like homemade-made-easy.

It's simply "OOH IT'S SO GOOD!!®"
