Mr. Food: White Russian Pie

With summer coming up, our homemade pies more often than not are going to be chilled ones or frozen ones rather than the traditional baked ones.

Well, here's a novel, rich, no-bake one that gets its name and taste from a very popular drink favorite! Using any brands at all, in a saucepan, over low heat, we stir together 24 marshmallows along with 1/2 cup milk, until the marshmallows melt. We let that cool and, meanwhile, we crush up finely about 2 dozen cream-filled chocolate sandwich cookies.

Combine them with 3 tablespoons melted butter and press that mixture over the bottom and sides of a 9-inch pie plate then let it firm up in the freezer for 30 minutes.
Okay, into the cooled marshmallow mixture we stir 1/3 cup coffee liqueur (or strong chilled coffee), fold in 2 cups whipped cream or topping, spoon it into the crust and freeze it overnight, and we've got a rich, creamy pie that gets both its name and flavor from the White Russian cocktail.

Maybe garnish it with some chocolate curls and we have got all those favorite flavors all in one decadent pie!
