Only in the movies or on TV do we find perfect families gathered around the table eating their dinner right on time every single night. For most of us, we often run into mealtime madness.
So here's how to have a good meal "in the bag," ready to heat up right on our grills – no matter what or when!
We cut 4 sheets of heavy-duty aluminum foil about 18 inches long.
Place equal amounts of 1 can of drained pineapple chunks over the center of each sheet.
Top 'em with 1-1/2 pounds of peeled and deveined raw shrimp. We top that with a mixture of 1 chopped red pepper, and 1 tablespoon each of fresh grated ginger and seafood seasoning.
And to give it its kick, we can add some chopped Jalapeno or a bit of ground red pepper, then top that off with a few pats of butter, a sprinkle of brown sugar, and a squeeze of fresh lemon juice.
Now we fold and seal the packets, leaving a bit of room for air to circulate, and whenever we're ready, we grill ’em, covered, over a medium-high heat for 8 to 10 minutes, that's it, and mmm, we've got a tangy sweet 'n' spicy tropical-tasting meal that we can serve as is, or over rice or pasta.
Plus, the bonus is since they're already portioned, we can cook ’em as needed in case everyone doesn’t show up on time!
