There is something to be said for the ease of main-dish salads, especially during the warmer weather, because we don't want to heat up the kitchen or fuss, so here's how we can toss together something hearty enough to satisfy and still keep our cool.
Using any brands at all, we cook up a 20-ounce package of cheese tortellini according to the package directions, and drain 'em. Meanwhile, we combined 1 cup each of sour cream and mayonnaise, and 1 package dry ranch dressing mix.
Okay, we toss the tortellini with the dressing mixture along with 1 package cooked sliced chicken, 1 drained jar sliced roasted peppers, 6 thinly sliced scallions, and 1/4 cup fresh chopped basil, and that easily it's ready to dig into warm just as is, or we can chill it in the fridge for later.
And sure, if you've got some leftover cooked chicken, meat, or seafood in the fridge, by all means use that instead! Any way at all, it's got everything rolled into one! All we need to bring to the table is our appetite!
