There isn't a summer that goes by when someone doesn't ask me for my recipe for Grasshopper Pie! It's a classic no-bake that'll help us keep our cool in the kitchen! In a bowl, we combine a half stick of melted butter with two cups of finely crushed chocolate sandwich cookies, reserving one tablespoon for garnish.
We pat the crumbs firmly over the bottom and sides of a sprayed 9-inch pie plate to form a crust, and while it chills up a bit in the fridge, in a large bowl, we beat an 8-ounce package of softened cream cheese until it’s fluffy, gradually adding in one can of sweetened condensed milk, one tablespoon of lemon juice, and 1/4 cup green crème de menthe.
Then fold in an 8-ounce container of whipped topping, spoon it all into the pie crust, sprinkle those reserved crumbs over the top, and back into the fridge it goes for 4 hours to firm up, and when we take this creamy smooth, cool classic out, divvy it up, and maybe hit it with a dollop of whipped cream and maybe even a mint leaf! It's summer at all of its best!
