Our love for south-of-the-border food has turned into fiesta proportions so big, in fact, that today we're having a south-of-the-border luau.
How can that be possible? With these easy skillet melts! We lay out 4 flour tortillas, and sprinkle each with about 1/4 cup of shredded Cheddar cheese.
We layer 4 slices of deli-style ham on each tortilla. Top the ham with a sprinkling of about 2 tablespoons crushed pineapple that we drained.
Add another 1/4 cup of cheese and top them off with another tortilla, just like making a sandwich! Okay, now in a large sprayed skillet, over medium heat, we cook each quesadilla for about 1-1/2 minutes per side, until they warm through and the cheese is melty, and done! And sure, we can use any brands we'd like.
And when we slice these into wedges and serve 'em up maybe with a bottled fruit salsa…mmm mmm!
