It's melon season, and they're ripe for the picking as a super Best Food Buy, and with savings like these, we'll want to pick up an extra one, but what to do with them besides the usual ways? Well, here's a cool idea!
We peel and cut up a ripe cantaloupe, put it in our blender or food processor along with 3 cups of softened vanilla ice cream, 1/4 cup honey, and half of a 6-ounce can of thawed, frozen orange juice concentrate.
Smooth it with a few whirls on high, transfer it to a pitcher or serving bowl, cover it and let it chill up in the fridge for about an hour.
Now, when it's time to serve, we gently stir in 1-1/2 cups chilled ginger ale, pour it into bowls, maybe finish it off with a mint leaf or a sprig, and we've got "smooth and creamy" along with "light and lively!"
And wait! There are options!
We might lighten it up with low-fat vanilla ice cream or yogurt if we prefer, or substitute honeydew for the cantaloupe and pair that with limeade concentrate instead of orange juice, or maybe make some of each! Oh, will they adore you! But any way at all, when they put that spoon to their mouths and get a taste of that smooth and creamy, mmm mmm!
