It's summertime and the living is easy, or at least it should be! That's why we're looking for no-fuss light summer dishes to fix right about now, and when it comes to that, nothing does it better for us than a hearty main-dish salad.
We coat both sides of an 8-ounce beef tenderloin filet with a bit of a sweet-and-spicy French dressing and, in a skillet, in a bit of oil, we sauté the steak for 5 minutes on each side, until it's about medium-rare, or whatever our desired doneness is.
Meanwhile, in a large bowl, we toss together 1 package of our favorite bagged salad in 1/2 cup dressing. Onto a platter it goes, and to finish it off, top it with thin slices of warm tenderloin.
Then I like to top mine with a sprinkling of sliced scallions and sliced pickled beets.
Now sure, if your gang's bigger, simply double or triple the recipe for however many place settings you're putting out!
But let me tell you, when those taste buds get a sampling of the cool, crispy summery greens contrasted by the warm and tender tangy steak…mmm mmm! What a fit for royalty!
