Sausage and peppers are a big festival favorite, and if we're looking to bring that popular taste down to scale at home, we can think of these that are party-perfect. And rain or shine, the weather doesn't matter. These will always work because they're oven-baked!
We cut one red and green pepper each into 8 strips, cut one pound of rope Italian sausage into 16 chunks. Place a chunk of sausage in each pepper strip like this. Now, using six-inch wooden skewers (remember to soak them in water for 15 minutes first, so they don't burn), we skewer through the pepper, sausage and again through the pepper, like this. Place them on a baking sheet. Then into a pre-heated 350-degree oven they go to bake off for about 20 to 25 minutes, until the sausage is no longer pink. Done!
And sure, the sausage can be the sweet mild type or the hot tangy type, the choice is ours! When we're ready to serve, we can offer up our favorite dipping sauce, simply a cup of warmed spaghetti sauce or a dish of mustard. Any way at all, they're gonna be gobbling these right down!
