Mr. Food: Pasta With Mushrooms

On election day, and no matter our busy schedules, as citizens it's our duty to find the time to vote, so here's an idea for a quick supper before or after we cast that ballot, or really for any time we're in a rush but still want some home-cooked comfort!

While we cook up a container of fresh cheese-filled tortellini, according to the package directions, in a skillet, in 3 tablespoons of melted butter we sauté 4 minced garlic cloves for a couple of minutes, add in 3 sliced portabella mushroom caps, and cook them for about 4 to 5 minutes and stirring them around until they're tender.

Stir in 3 more tablespoons of butter, 1/3 cup shredded Parmesan cheese, 1 tablespoon fresh chopped basil and 1/4 teaspoon pepper.

Give it a good mix, spoon it all over the now-cooked and drained tortellini, top it with a bit more basil and, and like that, we're a hero! It’s a cinch.

We can use any brands we'd like, and portabellas are so meaty that we have something really hearty to bite into! When we serve that up on a platter along with some toasted garlic bread… wow!
