Spicing up Florida's History Museum

Florida has more than 300 crops and commodities on the market and the state's executive chef wants to see some of them on your dinner table.

Folks lined up today for a chance to try Latin spiced red grouper tacos.

Chef Justin Timineri served it up at the Museum of Florida History in Tallahassee today.

He travels the world to share recipes that use Fresh from Florida ingredients. From fish to tomatoes to oranges.

"It's important to figure out what those are and learn about the seasons of growing so you can purchase those and incorporate them into your diet," said Chef Timineri.

Timineri even toted 300 pounds of swordfish to London with him to cook for U.S. Olympic athletes in 2012. His biggest pointer when cooking with fish, keep it on ice from the moment you buy it until the moment you cook it, even if it's in the refrigerator.
