Mr Food: Corn Pudding

We’re celebrating the men who have led our great country through both war and peace.
And while learning about our presidents, we’ve discovered that our 34th – Dwight D.
Eisenhower, or "Ike," as he was known – loved to cook.

So if you want your gang to say "Hail to the Chief Cook" in your house, here’s a version of one of his favorite dinner go-alongs.

In a bowl, we combine 1 large drained can of whole-kernel corn, 1 large can of cream-style corn, 1/4 cup each of milk and sugar, 2 beaten eggs, 2 tablespoons cornstarch, and 1 cup crushed buttery-style crackers.

Give it a good mix, spoon it all into a sprayed 1-1/2-quart casserole dish, and sprinkle the top with another 1/2 cup of those crushed crackers.

Into a preheated 350°F oven it goes to bake for about 45 to 50 minutes, you know, until it’s set and golden brown. And when we take that out and serve it up along with any of our favorite main dishes, or maybe one of Ike’s, like stuffed breast of veal, this creamy, comforting side dish will stick to their ribs like it’s supposed to.
