Mr. Food: Chicken Scampi

  • 1 tablespoon olive oil
  • 1/4 cup (1/2 stick) butter
  • 2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 6 garlic cloves, chopped
  • 2 scallions, thinly sliced
  • 1 tablespoon chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

    In a large skillet, heat the oil and melt the butter over medium heat. Add the chicken and sauté for 3 to 4 minutes, or until browned on all sides.

    Add the remaining ingredients and sauté for 2 to 3 minutes, or until the garlic is golden

    SERVING TIP: Serve over hot cooked linguine or rice.
