16 oz. cooked chicken, chopped
½ cup cooking cream cheese
1 cup shredded cheddar cheese
Eight flour tortillas
Fresh chopped cilantro
1 Tbsp. olive oil
Fresh salsa
1 tsp. cumin
Directions
1. Heat olive oil in a skillet over medium heat. Spread cream cheese on one side of four tortillas. Chop cilantro and chicken.
2. Place tortilla, cream cheese side up, in the skillet. Place chicken, shredded cheese and cilantro on top of the cream cheese. Sprinkle cumin over the chicken mixture. Place a plain tortilla on top.
3. Cook for 3-4 minutes, or until golden brown. Flip and cook another 2-3 minutes until or evenly cooked on both sides. Cut into pieces and serve with fresh salsa.
