Ingredients
- 2 cups all purpose flour
- 1/3 cup sugar
- 1 tbsp baking power
- ½ tsp baking soda
- ¼ tsp salt
- ¼ cup of butter
- ¾ cup buttermilk
- ½ tsp vanilla
- 1/3 cp mango yogurt
- 1 egg
- 1 tbsp orange zest
- 1 mango, peeled and cut into small cubes
- 1/3 cup of unsweetened coconut (fresh in freezer section)
Glaze:
- 1 cp confectioners sugar
- 2 tbsp of OJ
Directions
- Pre-heat oven 400 degrees
- Mix dry ingredients
- cut in butter until fine and crumbly
- Stir together liquid ingredients
- With fork mix liquid into dry ingredients until all dry is wet(do not over mix
- Stir in mango and coconut
- Drop by mounds onto parchment lined baking pan
- Bake for 20 minutes
- Glaze while warm
- Pour Glaze on warm rolls
