Peanut Butter Cup Brownies
Note: to get nice cut edges on the brownie, refrigerate them for a couple of hours until cold and then cut!
2 sticks unsalted butter
8oz semi-sweet chocolate, chopped
1 ½ c all-purpose flour
¼ tsp. Kosher salt
1 ¼ c peanut butter cups, chopped
Preheat oven to 400 degrees. In a microwave safe bowl melt the butter and the chocolate for 1 minute on high power, stir and put in microwave for another 45 seconds or until fully melted, set aside to cool. In the bowl of an electric mixer with a paddle attachment beat the eggs and the sugar until pale and fluffy. Lower the speed and add the cooled chocolate mixture and the vanilla. With the mixer on low, start pouring in the flour and salt until just combined. Fold in the peanut butter cups. Scrape batter into a 9x13 inch baking dish that has been sprayed with non-stick spray and lined with a piece of parchment paper. Bake for about 35 minutes or until the top just starts to crack. Let cool completely, cut into desired size (about 12 pieces), Enjoy!!
